Roasted Chicken and Sweet Potatoes with Cajun Seasoning
Roasted Chicken and Sweet Potatoes with Cajun Seasoning is probably one of my favorite dishes to eat when trying to eat healthy meals. This is such a filling meal.

Ingredients
For the Cajun Seasoning:
2tbspsmoked paprika
1tspdried oregano
1tspdried thyme
1tspground black pepper
1tspchili powder
2tspgarlic powder
2tsponion powder
2tspsalt
½tspchili flakes
Others:
2tbspgheeor butter
2tbspolive oil
5clovesgarlicchopped
300gchickencut into pieces
150gsweet potatoescut into chunks (see notes)
Salt & pepperto taste
Instructions
For the Cajun Seasoning:
Mix all ingredients in a small bowl. Set aside or store in an air-tight jar until ready to use.
Prepare the chicken and sweet potatoes for roasting:
In another small bowl, add 2-3 tbsp of Cajun seasoning, olive oil, and ghee (or butter). Mix and set aside.
Pat dry the chicken and place in a baking dish; season with salt & pepper. Add the sweet potato chunks, garlic cloves, plus the Cajun seasoning and oil mixture. Mix using your clean hand.
If planning to marinate, you can cover the baking dish with cling film and marinate in the fridge for 2 hours up to overnight. However, you can skip the marinating part and roast in a preheated oven at 400 F for 45 minutes to 1 hour. You may need to watch the sweet potatoes as they may be overcooked.
Recipe Notes
You can use other veggies, but I really love sweet potatoes and Cajun seasoning together.
Butter can be used instead of ghee.
The duration for roasting the sweet potatoes may vary, depending on the freshness of the sweet potatoes. Some may be cooked at 25-minute mark, but some take longer to cook. You can check after 25 minutes if the sweet potatoes are tender. I love mine on the mushy side so I don't mind if they're overcooked.
Sweet potatoes can be left with skin or without. If leaving the skin on, make sure to wash properly.
