Ingredients

Mango filling:

  • 1 cup chopped ripe and firm mangoes
  • 1 tbsp lemon juice
  • 3 tbsp white sugar
  • 2 tbsp cornstarch
  • Pinch of cinnamon
  • Pinch of salt

Others:

  • 8-10 slices white bread
  • 1 cup breadcrumbs
  • 2 eggs beaten
  • cooking oil for frying

Instructions

For the mango filling:

  1. Place all the ingredients for the mango filling in a heatproof bowl. Mix everything and microwave for 1-2 minutes until it resembles a paste. Let it cool before using as a filling.

Others:

  1. Cut the sides (brown part) of the bread. (The brown part of the bread can be used as breadcrumbs after they have dried out - don’t throw them.) Now, you’ll have the white part only - flatten this using a rolling pin or a bottle.
  2. Place about 1 tbsp of the mango pie filing on top of the flattened white bread.
  3. Brush the sides (only half side) of the bread with beaten egg to serve as a “glue”. Fold the other half, press and seal using a fork.
  4. Coat the filled mango bread pie with beaten egg and then with breadcrumbs. Set aside on a plate.
  5. In a pan over medium heat, add oil. When the oil is hot, fry the mango bread pie until all sides are golden brown. Transfer the fried mango bread pies on a plate with a stack of paper towels to drain excess oil.

  6. Enjoy immediately.
