Fried Canned Tuna Balls

Ingredients

For tuna mixture:

  • 2 cans (170 g each) tuna in water, drained
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2-3 tbsp breadcrumbs see instruction #1
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper
  • zest of 1/2 lemon
  • 1 tbsp chopped fresh parsley
  • 2 tbsp mayo
  • 3/4 cup shredded cheddar cheese
  • 1 beaten egg

For coating #1:

  • More bread crumbs for coating

For coating #2 & frying:

  • 1 beaten egg
  • 1/3 cup breadcrumbs
  • Cooking oil

Instructions

  1. In a bowl, add all the ingredients for the tuna mixture. For the breadcrumbs, start with 2 tbsp, then mix everything until combined. Try shaping the mixture into a ball. If not firm enough for you, add another tbsp of breadcrumbs.
  2. For coating #1: Prepare about 1/3 cup of breadcrumbs in another bowl.

  3. Take about 2 tbsp of the tuna mixture and shape them into a ball. Coat with breadcrumbs and transfer to a plate. Cover this and keep in the fridge until chilled and firmer.
  4. For coating #2: Take out the chilled tuna balls from the fridge. Prepare two bowls - add 1/3 cup of breadcrumbs to one bowl, then 1 beaten egg to the other bowl. Dip each tuna balls in the beaten egg then coat with breadcrumbs. Place the coated tuna balls in a plate.

  5. To fry: In a pan over medium heat, add oil 2 inches from the bottom. When the oil is hot enough (about 375 F), drop tuna balls. Make sure you don’t overcrowd the pan. Fry the tuna balls for 3-5 minutes or until golden brown. Place the fried tuna balls on a stack of paper towels or on a strainer to drain excess oil.
