Watermelon and Mint Lemonade

A delicious and refreshing drink that’s perfect for summer. It has a mint-infused syrup and more mint leaves to make that mint flavor really stand out without messing up the taste of watermelon and lemon. It is really one of the best lemonades you’ll ever have.

Ingredients

Syrup:

  • 250 ml (1 cup) water
  • 200 g (1 cup) sugar
  • 1 cup fresh mint leaves washed

Lemonade:

  • 4 cups cubed watermelon
  • 3/4 cup fresh mint leaves washed
  • 6 lemons juiced
  • Syrup recipe above
  • 250 ml (1 cup) cold water
  • Ice cubes

Instructions

  1. In a small pot over low heat, add water, sugar, and fresh mint leaves. Bring to simmer for 5 minutes. Set aside to cool down. When cooled down, strain the syrup to remove the mint leaves.

  2. In a blender, add watermelon. Blend until pureed. Strain the blended watermelon and place in the liquid container.
  3. In the same blender, add mint leaves, lemon juice and syrup. Blend for few seconds just until the mint leaves are chopped up. Add this to the liquid container with the blended and strained watermelon.
  4. Add cold water and give it a good mix. Pour into glasses. Add ice cubes, mint leaves and sliced lemons. Enjoy one of the amazing lemonade drinks!

Recipe Notes

It is nice to keep the watermelon very cold - it makes your drink colder and lovely to enjoy right away.

You can add more mint leaves (in step 3) to have that mint flavor really stand out, but it will give your drink a darker color. As for me, I don’t mind - I love it!

At the end, you can adjust the taste according to your liking - add more lemon juice, mint or water.
