BBQ Pepsi Can Chicken

The chicken is moist and the skin is crispy. The sauce is smoky, sweet and spicy. It is close to a barbecue sauce. Gosh, it is INSANELY DELISH! Trust me - this is one of the best chicken dishes you'll ever make.

Ingredients

  • 1200 g whole chicken
  • 2 tbsp chicken rub recipe below

For the sauce:

  • 180 ml (¾ cup) Pepsi
  • ¼ cup + 2 tbsp dark brown sugar
  • 1/3 cup tomato paste
  • 3 garlic cloves crushed
  • 60 ml (¼) cup Sriracha
  • 1 tbsp smoked paprika
  • ½ tsp salt

Instructions

  1. If making the sauce ahead of time, combine all ingredients in a saucepan. Heat over low-medium heat until it thickens (about 5-10 minutes). Let cool before keeping in the fridge. You may keep this overnight.
  2. Preheat your oven to 400 F. Prepare a roasting pan. Set aside.
  3. Pat dry the chicken using a paper towel. Massage the chicken with the chicken rub.
  4. Open a can of Pepsi and remove half of it.

  5. Let the chicken sit on the can by inserting the can in the chicken cavity.
  6. Roast the chicken for 45 minutes to 1 hour or until the juices in the thigh part run clear. Make sure to rotate the pan halfway thru baking.

  7. Take out the chicken from the oven and brush the chicken all over with the sauce. When done, put back the chicken in the oven for another 20 minutes.

  8. Let the chicken rest for 10 minutes before carving.
  9. You can enjoy the chicken with the sauce – it is AMAZING!!
