Stuffed Bell Pepper Soup (Filipino Style)

The stuffed bell pepper soup in Filipino style - a combination of sweet and (little) sour. It is one of the perfect comfort foods.

Ingredients

  • Cooking oil
  • Onion chopped
  • Garlic chopped
  • 1 cup red and firm tomatoes chopped
  • 1/3 cup green bell pepper chopped
  • 1/3 cup red bell pepper
  • 250 g ground beef chopped
  • 2 beef cubes
  • 375 ml tomato sauce I used Filipino style tomato sauce
  • 200 - 300 ml water
  • 3 tbsp tomato paste
  • 1 tsp  sugar
  • Salt and pepper to taste
  • White rice to serve
  • Lemon to drizzle
  • Parsley for garnish

Instructions

  1. In a pot over medium-high heat, add oil.
  2. When oil is heated, add garlic and onions. Cook until fragrant.
  3. Add tomatoes and bell peppers. Cook until veggies are soft.
  4. Then ground beef and cook until no longer pink and water has mostly evaporated.

  5. Add beef cubes (you may start from 1 cube and add more later on) and cook until dissolved. Add tomato paste, tomato sauce and water.
  6. Simmer on low fire for about 30 minutes.
  7. Add sugar, salt and pepper according to your taste.
  8. Serve with white rice. Drizzle with lemon juice and top with parsley (if desired).
