Ingredients
300gchicken breasts
1egg
2.5tbspmayo
2.5tbspall-purpose flour
100gmozzarella and cheddar cheesecombined (or just mozzarella)
1/2 - 3/4cupkernel corndrained
1tbspspring oniongreen part
1/4tspsalt
2tspSriracha
Cooking oil
Instructions
Chop the chicken breasts into small pieces. Place in a bowl and set aside.
Add egg, mayo, flour, cheese, corn, spring onions, salt and Sriracha.
Mix just until combined. You can cook this immediately or can be kept in the fridge for two hours up to overnight to develop the flavor.
When ready to cook: In a skillet over low-medium heat, add oil. When oil is heated, add about 1 1/2tbsp of the mixture and fry on both sides until browned.
Place on a stack of paper towels to dry excess oil.
Serve with your favorite sauce. I served mine with tartar sauce.
