Creamy Macaroni Soup

Guess what? I wrote this a few days before I even tried the recipe! 🤔 I figured my version of this soup was going to turn out great because, let’s be real, it’s pretty easy to make. And I’m glad it did, because it would’ve been super embarrassing to write all this before knowing if the soup was a flop or a hit 😂. But hey, who’s gonna know about my assumptions? Just me and my soup! 🤫

Now, the traditional—if that’s even a thing—Filipino macaroni soup is a beloved dish that combines shredded chicken, creamy broth, and macaroni into a hearty, flavorful blend. The creaminess comes from milk or evaporated milk, though I can’t resist adding cream of chicken too.

Here’s where the twist comes in: instead of cream of chicken, I used cream of mushroom powder. Oh, and there’s no chicken in this version either. Some people say this is the secret hack to Jollibee’s creamy macaroni soup, but honestly, I haven’t had their soup in years! 😅

Whether the taste of this soup is close to Jollibee’s creamy macaroni soup or not, I can assure you that it’s delicious. Even my BFF, who’s not a fan of creamy soups, approved of this one.

Creamy Macaroni Soup

Creamy, savory, and oh-so-satisfying—a true taste of home!

Ingredients

  • 3 tbsp butter
  • 4 cloves garlic (chopped)
  • 1 onion (chopped)
  • 8 slices of turkey sausage (or ham/sausage/hotdogs)
  • 200 g elbow macaroni
  • Water (about 4-5 cups)
  • 1 small can evaporated milk
  • ½ carrot (diced)
  • 1 chicken cube
  • 1 pack (62 g) Knorr cream of mushroom, dissolved in some water
  • 1/2 cup corn kernels
  • Salt , to taste
  • Pepper , to taste

Instructions

  1. Sauté onion and garlic in butter.
  2. Add slices of turkey sausage (or whatever you are using). If using mushroom slices, you can add this point.
  3. Add dry elbow macaroni and water, and let it boil.
  4. Once the water has boiled, add evaporated milk, a chicken bouillon cube, and carrot.
  5. Let it simmer until the macaroni is cooked.
  6. Add corn kernels and mushroom soup powder dissolved in some water.
  7. Season with salt and pepper.

Recipe Notes

  • You can add mushroom slices; I intended to, but I completely forgot.
  • I used turkey sausage slices instead of ham, but you can also use regular sausage or hotdogs.
