This Filipino Chicken Barbecue is one of the best things I made using an air fryer.
Filipino Chicken Barbecue is something I always have a craving for. If planning to go out during the weekend and you ask me what I want to eat, I answer Filipino Chicken Barbecue most of the time.
Living in an apartment restricts me from grilling using a charcoal even in the balcony (building rules), although some apartments might be okay with it. There are places where you can grill like at the open beach, but who goes to the beach to grill while the sun is scorching hot? Well, not me!
One day, I was thinking about dishes to make using an air fryer and I saw a printed recipe for Filipino Chicken Barbecue hanging on my corkboard. I said to myself, “How about an Air Fryer Filipino Chicken Barbecue?”. And my other self said, “That sounds great!”. And yes, I always have this conversation with myself.
FILIPINO CHICKEN BARBECUE USING AN AIR FRYER??
Making a chicken barbecue in an air fryer is easy. You have to place the marinated chicken in a foil and into the air fryer basket and set the time and temperature. After some time, we remove the foil and put back the chicken in the air fryer, baste the chicken and set the time again for the last time. After that, we smoke the chicken.
HOW DID I SMOKE THE CHICKEN?
I know some people in the Middle East, if not all, can relate to this. The trick or technique I am going to share with you is something I learned from my former Egyptian colleague.
After the chicken has been cooked, transfer to a container (I suggest using a heatproof one) with a lid (I always use a skillet). Get a foil and shape it like a small bowl or use a heatproof bowl, then put a tablespoon of cold butter in the foil or heatproof bowl. Put this bowl with butter in the middle of the container where you transferred the cooked chicken. Turn on the stove and then place a piece of charcoal and heat it for like 2 minutes. I used this kind and it’s smokeless while on the naked flame. After 2 minutes or so, remove the hot charcoal and put immediately on the bowl with butter. Put the lid on and wait for 10 minutes or more before moving the chicken to a serving plate.
This Air Fryer Filipino Chicken Barbecue absolutely satisfied my cravings. It was not overcooked and dry.
NOTES:
- When able to grill using the charcoal, you can charcoal grill it after the marinating part.
- You can skip the smoking part, but it really gives a nice flavor.

Air Fryer Filipino Chicken Barbecue
Ingredients
- ½ cup (125 ml) banana ketchup
- 2 tbsp (30ml) white vinegar
- 2 tbsp (30ml) soy sauce
- 2 tbsp (30ml) calamansi juice
- ¼ cup (60 ml) 7-up
- 2 tbsp (packed) dark brown sugar
- 2 tbsp minced garlic
- 500 g chicken I used whole leg and chicken with wing part
Instructions

In a bowl, add all the ingredients. Cover with cling wrap and marinate in the fridge overnight.

The next day: Remove the chicken from the marinade; reserve the marinade. Place aluminum foil on your air fryer basket. Add the drained chicken; gather the top ends of the aluminum foil to seal. Attached the basket to your air fryer; air fry for 15-20 minutes at 200 C, depending on the size of your chicken.

While the chicken is inside the air fryer, place the marinade in a sauce pan. Simmer over low heat for 10 minutes or until sauce is slightly thick.

After 15 or 20 minutes, remove the foil from the air fryer basket and put back the chicken to the basket. Baste both sides of the chicken with simmered marinade and air fry again for another 2-3 minutes at 200 C.

At this point, the chicken is cooked and can be enjoyed. However, I’d like to smoke the chicken to get that smoky flavor. If planning to smoke the chicken, please follow the remaining instructions.

To smoke the chicken: Place the cooked chicken in a heatproof container with lid (I always use my skillet). Get a small heatproof bowl and place about a tbsp of butter (or you can use oil). Set aside. Get a piece of coal and put it on top of the naked flame. (Please watch the video for visuals.) When the coal is red hot, place it on the bowl with butter and immediately cover the heatproof container you are using. Let the chicken absorb the smoke for 10 minutes.

Now, you can enjoy the Air Fryer Filipino Chicken Barbecue with rice and your choice of dipping sauce.
