Lucky Me! Pancit Canton Fried Rice

Lucky Me! Pancit Canton Fried Rice is simply a fried rice with instant noodles.

Instant noodles is a part of the Filipino lives. This is one of the foods that saves us from hunger whenever we are lazy to cook or there isn’t enough time to cook after a tiring day at work or school. We love to eat it as is, with bread, or even with rice. Carbs overload, yes?

Although I love instant noodles a lot, I don’t eat it regularly. Let’s say once in a week or once in two weeks. It depends on the cravings, too.

Lucky Me! is one of the famous brands of instant noodles in the Philippines with different flavors. I love all the flavors, but my top favorite is the Kalamansi flavor. It has a mild Kalamansi flavor and not too salty. Like any other instant noodles, it can be customized by adding veggies or meat, but I enjoy it as is or with rice or bread.

As I’ve mentioned before on my Baked Feta Pasta, I’ve been spending a lot of time on TikTok. And yes, it’s where I found Lucky Me! Pancit Canton Fried Rice. Or maybe that was on Facebook? Anyway, I can’t really remember. I’ve seen few posts already so I thought I should give it a try, too.

WHAT’S IN THIS LUCKY ME! PANCIT CANTON FRIED RICE?

As the name suggests, it is a fried rice with instant noodles called Lucky Me! Pancit Canton.

First, I cooked the instant noodles according to package instructions without adding the seasoning packets as the last step. The seasoning packets were set aside for later use.

Then, I continued with the usual process of cooking the fried rice – sautéed garlic, added the mixed veggies (my usual thing), the day-old rice, and the addition of the seasoning packets.

And one last thing – I added calamansi juice to enhance the calamansi flavor and sweet soy sauce just to give it a slight sweetness. Of course, these last two additions are completely optional.

Personally, fried rice is not complete without fried egg. So yeah…

I absolutely loved this version of fried rice. I love the mild citrusy flavor from pancit canton seasoning and the calamansi juice. I love the slight sweetness, too, and the texture I get from the mixed veggies. I am certain that I am going to make this again… maybe try another flavors, too.

Lucky Me! Pancit Canton Fried Rice

Lucky Me! Pancit Canton Fried Rice is another way to level up your pancit canton or fried rice. It is slightly citrusy, sweet and easy to make, too.

Ingredients

  • 1 Lucky Me! Pancit Canton I used Kalamansi, crushed into small pieces (see notes)
  • 1 tbsp cooking oil
  • 1/4 cup chopped carrots optional
  • 1/3 cup frozen green peas optional
  • 1/3 cup kernel corn drained, optional
  • 1 cup day-old rice I used a 250 ml cup
  • Seasoning packets from the Lucky Me! Pancit Canton
  • 1-2 tbsp calamansi juice optional
  • ½ tbsp sweet soy sauce optional
  • Salt to taste
  • Sliced green onions to serve
  • Fried egg to serve

Instructions

  1. Add enough water into a pan. (You can use a pan where you can cook the fried rice, too.) Let the water boil over high heat. Put the crushed pancit canton and save the seasoning packets for later. When the pancit canon is cooked, drain and set aside. Don’t put the seasoning yet.
  2. In the same pan (cleaned and if it is spacious enough to cook the fried rice) over medium heat, add cooking oil. Add garlic and cook until fragrant.

  3. If using mixed veggies: add carrots and frozen green peas; cook for about 2 minutes. Add kernel corn.

  4. Next, add the day-old fried rice. Break it down into smaller chunks/pieces by pressing the rice using the back of the wooden spoon.
  5. Add the drained pancit canton and the seasonings from the packet. If you are using calamansi juice and sweet soy sauce, you can add at this point.
  6. Mix everything and let the fried rice warm up.
  7. Season with salt. If necessary, adjust the seasoning as per your liking.

  8. Serve with sliced spring onions and/or fried egg.

Recipe Notes

  • You can use another flavor of pancit canton.
  • Don’t forget to crush the pancit canton into smaller pieces: with the pancit canton still inside the packaging (closed), crush it using your hands.
  • Omit the mixed veggies or add your choice of veggies.
  • The addition of calamansi juice and sweet soy sauce is completely optional, but enhances the taste of the fried rice.
  • I suggest not adding a lot of rice as you might lose the flavor of the pancit canton.
