Filipino Macaroni Salad + Recipe Video

Filipino Macaroni Salad is sweet and considered as a dessert. It is mostly present in every occasion like birthdays and most especially during Christmas. Although I don’t celebrate Christmas, I do make this sometimes. But since I’ve tried the Filipino Chicken Macaroni Salad, I forgot about the classic version and haven’t made it in years that I almost cannot remember the recipe.

This sweet macaroni salad is usually made up of condensed milk, all-purpose/thick cream, mayonnaise, kaong, nata de coco, cheddar cheese, pineapple tidbits, and fruit cocktail. In my version, I also add corn kernel and evaporated milk. The corns add texture apart from the kaong and (and I love corn in almost everything, haha) and the evaporated milk makes the salad creamy and not dry even after chilling.

Going back to this Filipino Macaroni Salad being a dessert, it is often eaten together with the rest of the foods being served during the occasion. For some, they enjoy it after eating their main dish or other foods. While for others and that includes me, I enjoy it with the rest of the foods.

Let me give you a clear picture – you have everything on your plate – pasta, fried chicken, spring rolls, salad and whatever you can fit in your plate. Now, I missed going to a birthday or Christmas party!

After everything is mixed, it is placed in the fridge to chill. When it is chilled, the salad might become dry and not creamy at all and that’s the reason why I add evaporated milk. Adding more all-purpose cream means you need to adjust the rest of the liquid ingredients (that’s what happened when I add more cream).

Filipino Macaroni Salad

Filipino Macaroni Salad is sweet and considered
as a dessert. This sweet macaroni salad is usually made up of condensed

pineapple tidbits, and fruit cocktail. I also add evap milk and corn
kernel.

Ingredients

  • 250 g cooked elbow macaroni
  • 2/3 cup kaong drained
  • 2/3 cup nata de coco drained
  • 2/3 cup kernel corn drained
  • 2/3 cup fruit cocktail drained
  • 2/3 cup pineapple tidbits drained
  • ¾ cup cheddar cheese chopped
  • ½ – ¾ cup Nestle cream
  • ¾ cup mayonnaise
  • ¼ -1/3 cup condensed milk
  • 3 tbsp evaporated milk

Instructions

  1. In a bowl, mix everything. Do a taste test and adjust according to your liking. Keep in the fridge to chill.
  2. Enjoy chilled.
