It is so disappointing when the photos don’t do justice to your food. How in the world would I convince you that I just made a roasted chicken that’s full of AMAZINGNESS. When I say amazingness, I don’t mean the healthy stuff. But hey, you won’t eat this everyday. What I am trying to say is – this chicken is really tasty. It is great to make like this once in a while coz, for me, it tastes very impressive. Uh, do you know how impressice tastes like?
I’ve tried a roasted chicken sitting (??) on a soda can and I was like ‘Okay! That’s cool!’. And when I tasted it, I was like ‘OMGosh! I should make something like this!!’ I made this thrice for my friends and they loved it. Believe me – the chicken was never enough.
Have you heard of soda can chicken or beer can chicken?? I think they have the same procedure of cooking. Others use Coke, but I used Pepsi in this recipe. Of course, you can use Coke. The chicken is being roasted by letting it “sit” on the can. I used a chicken rub and made a sauce for basting the chicken.
The chicken is moist and the skin is crispy. The sauce is smoky, sweet and spicy. It is close to a barbecue sauce. Gosh, it is INSANELY DELISH! Trust me – this is one of the best chicken dishes you’ll ever make. If you are worried about the procedure, don’t be – it is very easy. You can even make the sauce ahead of time because it is tastier the next day.

Anywaysss, it’s time to see what you’ve been munching lately.

BBQ Pepsi Can Chicken
Ingredients
- 1200 g whole chicken
- 2 tbsp chicken rub recipe below
For the sauce:
- 180 ml (¾ cup) Pepsi
- ¼ cup + 2 tbsp dark brown sugar
- 1/3 cup tomato paste
- 3 garlic cloves crushed
- 60 ml (¼) cup Sriracha
- 1 tbsp smoked paprika
- ½ tsp salt
Instructions

If making the sauce ahead of time, combine all ingredients in a saucepan. Heat over low-medium heat until it thickens (about 5-10 minutes). Let cool before keeping in the fridge. You may keep this overnight.

Preheat your oven to 400 F. Prepare a roasting pan. Set aside.

Pat dry the chicken using a paper towel. Massage the chicken with the chicken rub.

Open a can of Pepsi and remove half of it.

Let the chicken sit on the can by inserting the can in the chicken cavity.

Roast the chicken for 45 minutes to 1 hour or until the juices in the thigh part run clear. Make sure to rotate the pan halfway thru baking.

Take out the chicken from the oven and brush the chicken all over with the sauce. When done, put back the chicken in the oven for another 20 minutes.

Let the chicken rest for 10 minutes before carving.

You can enjoy the chicken with the sauce – it is AMAZING!!

Chicken Rub
Ingredients
- 2 tbsp smoked paprika
- 1 1/2 tbsp salt
- 3 tsp onion powder
- 1 1/2 tsp garlic powder
- 3 tsp dried thyme
- 1 1/2 tsp ground black pepper
- 1 tsp chili powder
Instructions

Mix all ingredients and keep in an airtight container.
