It is that time of the year again when I tell myself “I need to lose weight”. I lost weight when I did the Whole30 Program and felt better as well. I gained back that weight – haha! It is not because of the holidays, but because of the amount of sugary drinks I consume – well, hello, soda and bottomless iced tea!!
Last year, I tried different methods to lose weight, but to no avail. The only method I know is to do the Whole30 program again and also because Whole30 is strict in rules. Although losing weight is not it’s main goal, still, I am hopeful that I’ll lose some pounds.
What I love about Whole30, it makes me feel better after doing it for 30 days – less joint pains and I feel lighter. It makes me feel conscious about what I eat. As long as I don’t cheat with huge glass of soda or iced tea after the 30 days, then I am good.
So… sweet potatoes, my BFF when doing the Whole30 program. You know, there are so many things you can do with sweet potatoes, right? Always, I roast them, but I was in a hurry and needed something to eat before going to work.
This is a skillet dish inspired by The Healthy Family and Home – it is very easy. Along with sweet potatoes, there are which add a very nice flavor to the dish and onions that are caramelized. Also, I added smoked paprika to get that smoky flavor. And to finish, I served them with Harissa-Tahini Sauce because… why not?? You can also add chia seeds if you want to make your meal more nutritious.
The dish came out so tasty, comforting and so satisfying. Whether you are doing the Whole30 or just want to enjoy something sweet, but healthy, this dish is perfect for you.
I am so excited to bring this healthy dish for my friends to taste test at Fiesta Friday #259. I hope my partner in co-hosting this week, Ai @ Ai Made It For You, will love this, too. Please join us in this fun and amazing party! See yah! 😉
Whole30 Smoky Sweet Potatoes with Caramelized Onions
A Whole30 dish that’s super satisfying and comforting – perfect when you want to eat something healthy and delicious.
Ingredients
- 2 tbsp olive oil
- 1 large onion sliced
- 3 cloves garlic chopped
- 500 g sweet potatoes peeled and chopped
- 1/3 cup red bellpepper chopped
- 1/3 cup yellow bellpepper chopped
- 1 tsp hot smoked paprika (see notes)
- 2 handfuls baby spinach
- Salt & pepper to taste
- 1 tbsp chia seeds optional
- Harissa-tahini sauce optional, but recommended
Instructions
-
In a skillet over medium-high heat, add olive oil.
-
When the oil is hot enough, add onions. Add salt to let the onions sweat and cook until caramelized.
-
Add garlic and cook for a minute.
-
Add sweet potatoes and bellpeppers. Cook over low-medium heat until sweet potatoes are fork-tender (unless you want them on a mushy side like me). This time, add the smoked paprika as well. You may also need to add a small amount of water from time to time and stir occasionally in order not to burn the veggies.
-
When veggies are cooked, turn off the heat and add salt and pepper according to your taste.
-
Add baby spinach and mix until wilted.
-
If using, add chia seeds before serving and harissa-tahini sauce.
Recipe Notes
If you don’t want a spicy dish, you can use regular smoked paprika.
